My Joel Robuchon experience

Whatever the case, i like to indulge once in a while and Robuchon being chef of the century and still holds the most combined Michelin stars in the world presently, it is sorta a must try once in my lifetime kinda thing.

Head chef that mans the fort, been with the master for well over 10-15yrs.




The restaurant itself!
House 3 diff restaurants under the same name. Each different price range.
Imagine walking pass this everyday going out and coming back to hotel. The JR is behind the restaurant another 1.5km walk.




Being right opposite the hotel i stayed in makes it a no brainer also.

Lucky on a very hot season no suit is needed, phew....

Being my first 3* experience i was eagerly waiting what would follow.

From the time i enter the hostess already knew my name  :o

Brought upstairs to the main dining room and seated.

Pics taken with iPhone so not the best quality.

Offered champagne once seated down.




Surroundings.







Menu selection for the night.
No points for guessing which one i took. :P






Bread and dip offered.
Crispy crust and a very dense bread.




Even carving out the french butter is a spectacle!
Butter didnt even melt during the end of the meal at room temp.





What better way to start off with caviar and with a base of crab meat.
I will leave you to read the fancy menu descriptions in the pic above.





French food with Japanese influence off course.
Uni 3-ways.







Being in a French restaurant and only been given ONE bread?
No way....
Robuchon is famous for its bread basket!
Look at this !!!
No way to even remember the breads after the server explain what each one is.
You tell them which one you want, as many as you want and they will come back with fresh hot ones.





OK typing this out is making me hungry...out to lunch and back with more later.  :P

LOL i couldnt wake up early enough to go.

Never had caviar in Malaysia before, this is my first time having it like this.

Well the caviar as in tobiko lots haha.

It was not as salty as i expect.

At this time my bread selection arrived.
Milk, croissant and seaweed.




Now comes the corn soup.
Very sweet soup. At the bottom of the plate has curry flavored jelly.






Crustacean 3 ways.








Squid with squid ink sauce.





Foie Gras, very crispy outer and buttery soft inside.






Next up a strong tasting gorganzola cheese, but accompanied by dried cereal and fruits







Dover sole, first time having this, quite a firm flesh fish.





Wagyu time!






At this point the cheese cart came my way, but there are few more course to go so i gave it a pass.
The table beside me added this fromage course though.





Last savory course, seasonal veggies.





Dessert time







Not a coffee person, so opt for tea, surprised only one type of tea was offered.




Just when you think its over, its petit fours time and this was wheeled out!

What a nice experience this is...
My finest dining experience was at Shang's LaFite... and that was 10+ years back trying to impress chicks... lol

Wanna sum up some of my thoughts.

Service:
Faultless, my water glass was never below 50%. Always filled, off course water need to pay  :Laughing_on_floor:
I counted about 1 waiter/server for each table, 1:1 ratio. But at the same time not intrusive.

Each dish was explained while being served on table. As with any good high end place. They can tell me origin of every single ingredient on the plate.

Environment:
Top grade decor as expected, traditional style. Soft music in background.
Only complaint is the a/c could have been cooler.

Food:
Overall was great, lots of ingredients and flavor profiles which is new to me.
One thing i did not like though, even towards the end the progression of the dish tended to be quite "heavy". No palette cleanser in between.
Lots of local Japanese ingredients used but French way of cooking.
The signature Robuchon mashed potatoes made appearance a few times over the course of the meal. 

I guess a mark of a great meal is if you can still remember the taste of the food and overall experience.
And it certainly did not disappoint.

really wish to exp this one day, especially my fren who was French chef before told me Crustacean 3 ways is one of their best, do you got it in lobster ?

Overall the meal took 3hrs total.

Hats off to you!!

Looks mouth-watering but I wouldn't dare step in there for dinner because I wouldn't know which fork or spoon to use with which dish!

Do pm me the location, how much damage it was and whether the food lived up to the hype of the multi-star Michelins. Will be in Japan in several weeks time, so may try out too if its memorable..
Personal taste and preferences evolve over years, hopefully not 1 full circle otherwise it means we haven't learnt a single thing.

Always start with the outer most hehe.
Also with each new dish a new set of utensils are setup for you.

As this was my first 3* experience i can only compare with the previous 1/2* that i have been to in California.

In terms of "friendly-ness" i think because of the language barrier the US folks will "chat" with you more.
Although i must say Robuchon Tokyo staff everyone of them speaks well enough English to understand what i am asking and also to explain the menu and selections.

In terms of food wise i can say the Americans, especially Cali folks tend to go for more clean flavors.
French is more heavy with the sauces.

Surprised that they don't serve a palette cleanser / sorbet after each entree... isn't it a French thing?
Did they provide a somellier to introduce different wines to pair with the myriad of dishes? (making you spend more money)... lol

For sure they have a sommelier and did offer wine choices to me. With about 25k bottles in their cellar i saw them bring out an iPad haha.

But then again as much as i want wine pairings my alcohol tolerance is very low. Half a glass of the champagne i am already full red.

So i didnt opt for wine pairing and just stuck with the champagne and water.
