jet78,

Basically, 1 kilo of pork, shallots, curry powder (ready mixed with turmeric), potatoes (or other veg as necessary) and milk.

Clean the pork and cut to bite size. If you use the 3 layer pork with skin, you may need to shave the skin as sometimes the hair is still there. Marinate with the curry powder and leave a while. 

Cut shallots (length wise) and fry until fragrant. Add the pork and fry for a minute or so. Add potatoes and continue to fry for another minute or so. Add a cup of water (or more if you want more sauce). Bring to a boil and after that simmer for 30 minutes. Add milk (I use 2 cups) and bring to a boil. After boil let it simmer for another 30 minutes. Add other veg at this point. Make sure your total cooking time is about 1 hour as it takes that long to fully cook pork (more so if you use pork belly and bones).

Stew pork with stir fried veg.

BTW... milk? what kind? coconut? or normal milk ok?

It is really up to you. If you can get coconut milk (fresh one) much the better. If not just use normal milk. I have stopped using coconut milk in curry for years.

No problem, just have to come to Taiwan.

Last night dinner.

Pongteh, a typical Peranakan dish. This is more basic with just pork and potatoes.



Must be had with Sambal Belacan.



And of course vegetables. Steamed broccoli.
